Bush’s Black Bean Salad Recipe

Bush Bean Salad RecipeI love black beans because they are not only good, but very nutritious.  So any time I run across a new recipe that calls for black beans I get excited.  Recently we found this salad recipe on the Bush’s Black Bean label.  It is so good and nutritious and refreshing.  Our family loves it!

In case it is not on the label on the cans in your store, here is the recipe:

Black Bean Salad

1 red bell pepper, diced
1 green bell pepper, dicedBush Bean Salad
1 yellow bell pepper, diced
½ cup diced red onion
1 can (15.25 oz.) corn, drained
1 clove garlic, minced
1 tsp. cilantro
¼ cup olive oil
4-5 tablespoons red wine vinegar
1 tsp. lime juice
1 can (15 oz.) Bush’s Black Beans, drained
Romain lettuce leaves
Tortilla chips

Cut all the bell peppers and red onion into ¼ inch dice. In a salad bowl, combine bell peppers, onion, corn kernels, garlic and cilantro and toss to mix. Add olive oil, vinegar, lime juice and salt and pepper to taste and toss again. Add Bush’s Black Beans and mix well. Serve over a bed of lettuce and tortilla chips.
